T45 wheat flour – 43.2%
Unsalted butter – 20%
Sugar – 20%
Water – 10%
Toasted quinoa – 2%
Toasted wheat germ – 1.5%
Toasted corn germ – 1.5%
Raising agent – 1.3%
Salt – 0.5%

Our process
Mix together the softened butter and sugar ;
Incorporate the flour, toasted quinoa, toasted germs, raising agent and salt, and mix everything together ;
Incorporate the water and mix until a formable and homogeneous paste is obtained ;
Let the dough rest for 30 min at 4°C ;
Shape the biscuits (7cm x 7cm x 5mm) ;
Let them rest for 30 min at 4°C ;
Baking: 15 min at 170°C.
